Sugar Reduction and Cooling: Why Cold Makes Sweet Taste Stronger

Cooling enhances perceived sweetness and masks sweetener bitterness – a natural ally for sugar-reduced formulations.
Sugar reduction has a sensory problem: sweeteners taste different. High-intensity sweeteners bring bitterness and metallic off-notes, and removing sugar removes the mouthfeel that made the product satisfying.
Cooling agents are an underrated part of the solution. Physical cooling amplifies perceived sweetness at the same sweetener level – cold and sweet are neurologically linked, which is why ice cream tastes sweeter melted. At the same time, the clean cooling of WS-3 or WS-5 physically counteracts the bitter aftertaste of stevia, sucralose and acesulfame-K.
The combination – a WS grade plus your sweetener system – delivers products that read as indulgent while cutting sugar. Our sugar-reduction application note, available on request, includes starting dosages by matrix.
